Capogrossi was born in Rome. In 1922 a family founded a small restaurant in the heart of Fiumicino, and for almost a century it kept its recipes intact: those of grandmother Filomena, an icon of Roman cooking.
A hundred years later, that house opens its doors in Santiago de Chile, led by chefs Andrea Bernardi and Fernanda Fuentes.
Here the two passes overlap. Nonna's tradition underneath; the modernity and invention of our chefs on top. The dish exists where the two meet, with neither covering the other, and always within the unwavering flavours of the Italian Mediterranean table.
